Load demo/sample data after setup masters are seeded

All setup masters are seeded automatically. Enable this only when you want sample users, clients, matters, billing, finance, calendar, registry, and BD demo records.

The installer will write .env, run migrations, seed all setup masters automatically, optionally load demo data, create the admin user, record the installation ID, and lock the system.
